Copycat Starbucks Pumpkin Bread

I don't think I will ever forget the taste of the Pumpkin loaf from Starbucks. It was probably my favorite thing at Starbucks as a kid. But then I grew up and started to become aware of ingredients and how they affected my body and I just couldn't let myself eat it anymore. Not only does the bread contain 410 calories (per slice!) but it also has 39g of sugar! To put that into perspective that's almost 10 packets of sugar! Which is more sugar than you should even be consuming in one day. What's even more concering is the ingredients:

sugar, pumpkin, enriched flour (wheat flour, niacin, reduced iron, thiamine mononitrate, riboflavin, folic acid), egg, soybean oil, enriched flour (wheat flour, malted barley flour, niacin, reduced iron, thiamine mononitrate, riboflavin, folic acid), water, pepitas (pepitas, safflower oil, salt), food starch-modified, sea salt, spice, baking powder (sodium acid pyrophosphate, sodium bicarbonate, corn starch, monocalcium phosphate), baking soda, soy lecithin.

The first ingredient is sugar, then enriched flour which is basically white flour with vitamins added back in, soybean oil which is most likely from GMO soybeans and more GMOs in the form of soy lecithin.

Well, move over Starbucks, there is a new Pumpkin Bread in town! (or in this case muffins....but you can make this recipe as a loaf or even donuts if you want! All it takes is a change of the pan!)

This recipe tastes just like the Pumpkin Loaf from Starbucks but it's protein packed, low in sugar and high in fiber! These are scarfed down quite often in my house for breakfast smothered in Peanut Butter or Almond butter. I'm already drooling and looking forward to breakfast tomorrow!

Copycat Starbucks Pumpkin Bread

 Yields 10-12

Note: I always make a big batch and store them in my freezer and heat one up in the oven whenever I am craving one!

Ingredients:

3/4 cup of Nutiva Coconut Flour

1/4 cup of Maple Syrup

2/4 cup of Coconut Sugar

6 eggs

1/2 cup of Pumpkin Puree

1 tsp Cinnamon

1.5 tsp Pumpkin Pie Spice

3/4 tsp baking soda

1 tsp Apple Cider Vinegar

 

Directions:

  1. Preheat the oven to 350
  2. Mix all ingredients together until blended well
  3. Pour into muffin tins (or donut tins or a small loaf tin)
  4. Bake 25-30 mins
