Panda Express Orange Chicken dupe!

2 chicken breasts (I used @belcampomeatco)

Breaded coating for the chicken:
1 cup gluten-free 1:1 flour (I used @bobsredmill)
2 eggs
Salt and pepper to taste

Cube chicken into 1/2 inch pieces, place into a mixing bowl. Mix your eggs and flour together and pour over chicken. Mix until well combined.

Spray with Avocado oil and air fry for 12 minutes at 400

The sauce:
Juice of one orange
2 Tbs rice wine vinegar
1 Tbsp honey
2 tsp sesame oil
1-inch knob grated ginger
1 garlic clove
1/2 tsp fish sauce
2 Tbsp coconut aminos
1.5 tsp arrowroot starch or cornstarch

While chicken is cooking, combine orange juice, rice wine vinegar, honey, sesame oil, ginger, garlic, fish sauce, and coconut aminos.
Once mixed, pour into a pan. Slowly add in your arrowroot and allow it to thicken up. About 5 minutes!
Once thick add chicken and toss until coated.
