Healthy Dunkaroos 😁

Where my 80’s babies at?! I almost cried eating these the other day. Dunkaroos were my favorite childhood treat & I’d be lying if I said I didn’t miss them! It’s mostly nostalgic these days because I don’t eat sugary things like this anymore, but it’s fun to have a healthier alternative!

These babies are sugar free & gluten free and can be made grain free (see below for grain free option)

1 1/4 cup gluten free flour
1 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
Few grinds of pink or sea salt
1/2 cup golden monk fruit sweetener
5 Tbsp butter
2 teaspoon vanilla extract
1 large room temp egg

Preheat oven to 350

Whisk together all of your dry ingredients in one bowl.

In another combine your butter and sugar until creamy and soft. Add in vanilla and egg and whisk until everything is combined.

Slowly start pouring in your flour. Towards the last 1/4 of the flour take it out and knead it on a flat surface with the leftover flour.

Roll into a ball and allow to cool in the fridge for about 2 hours or up to one day. (If you’re in a hurry you can freeze for around 30 mins)

Take your dough out of the fridge and roll until your dough is about 1/4 inch thick. (The thinner the cookie the crispier it will be) Cut out with a small animal cookie cutter (found on amazon) and bake for 10 minutes at 350.

Allow to cool (they will harden up as they cool) and dip them into you homemade or your fav store bought frosting with sprinkles! (I recommend @simplemills vanilla frosting - it’s the healthiest I’ve found)

Grain free option:

1 tsp ground flax
5 tbs grass fed butter, melted
2 cups almond flour
1 tsp cinnamon
1 tsp vanilla
Pinch of salt
6 Tbsp monk fruit

Combine dry ingredients together. Almond flour, cinnamon, flax, and salt. Add in butter and vanilla. Mix until well combined and form into a ball and throw it into the freezer for 20 minutes.

Take your dough out of the freezer and roll until your dough is about 1/4 inch thick. Use cookie cutters to get the small animal shape

Transfer to baking sheet and bake at 350 for 7 minutes. Allow to cool and serve with sprinkles and frosting!
